Turkey Patties With Spinach Rice - cooking recipe

Ingredients
    1 lb ground turkey
    1 None red onion, finely chopped
    1/4 cup cranberry sauce
    2 tbsp chopped parsley
    1 tbsp oil
    None None FOR THE SPINACH RICE
    3 slices bacon, finely chopped
    4 None green onions, thinly sliced
    2 cloves garlic, finely chopped
    1/2 None lemon, peel finely grated and lemon juiced
    3 cups cooked rice
    2 oz baby spinach leaves
Preparation
    For the turkey patties, combine ground turkey, onion, cranberry sauce and parsley in a large bowl. Season to taste; mix well. Shape into 8 patties.
    Heat oil in a large skillet on high heat. Cook patties for 3-4 mins each side until cooked through. Drain on paper towels and keep warm.
    For the spinach rice, cook bacon in a large skillet on medium heat until crisp. Stir in onions, garlic and lemon peel and juice. Cook 2-3 mins until tender. Add rice. Cook, stirring, for 3-5 mins. Remove from heat. Stir in spinach leaves and season to taste. Serve with patties.
