Lamb Chops With Tomato Sauce - cooking recipe

Ingredients
    1/3 cup white wine vinegar
    1 1/4 lb tomatoes
    2/3 lb apricots, pitted and chopped
    1 None red chili, deseeded and chopped
    1/2 cup brown sugar
    7 sprigs fresh oregano, leaves chopped + 2 sprigs for garnish
    2 tbsp oil
    12 None lamb chops
Preparation
    To make the tomato sauce, pour the vinegar into a large pot with the tomatoes, apricots, chili, sugar and oregano and bring to a boil. Reduce the heat and simmer for about 45 mins. Season, adding a little more vinegar and sugar if necessary, then remove from the heat and allow to cool.
    To prepare the lamb, heat 1 tbsp oil in 2 frying pans. Season the chops, then sear for 6-8 mins, turning. Transfer to plates and drizzle with tomato sauce and garnish with oregano.
    Reserve the remaining sauce for another use.
