Sashimi With Grapefruit Dressing - cooking recipe

Ingredients
    1 None pink grapefruit, peeled, pith removed, segments halved
    1 tsp grapefruit zest
    1 tsp extra-virgin olive oil
    1 tbsp finely chopped fresh chives
    1 lb sashimi-grade salmon or tuna, finely sliced on the diagonal
    3 None radishes, finely sliced
    1 None handful fresh parsley leaves
Preparation
    For the dressing, squeeze enough of the grapefruit flesh to extract 2 tbsp juice into a bowl. Add grapefruit zest, oil and chives and season with salt to taste.
    Arrange fish on serving platter. Sprinkle with the remaining grapefruit segments, then the radishes and chervil. Sprinkle with salt and black pepper. Drizzle with dressing to serve.
