Fettuccine With Tuna And Artichokes - cooking recipe
Ingredients

14 oz fettuccine
1/4 cup olive oil
2 cans (14 oz each) artichoke hearts, drained and coarsely chopped
4 None anchovies, drained and finely chopped
2 cloves garlic, crushed
3 cans (5 oz each) tuna in oil, drained and flaked into large chunks
1/4 cup coarsely chopped fresh parsley
1/3 cup shaved Parmesan cheese
Preparation

Cook fettuccine in a large saucepan of boiling salted water according to package directions. Drain, reserving 1 cup of the cooking water.
Heat oil in a large skillet on medium heat. Cook artichokes, anchovies and garlic for 3-5 mins.
Add to pasta with tuna and parsley. Gently toss to combine. Add some of the pasta cooking liquid to moisten, if needed. Season and serve with Parmesan cheese.
