Ingredients

2 1/4 lb corned beef
1 None onion, chopped
1 tbsp brown sugar
1 tbsp vinegar
3 None cloves
None None roasted tomatoes, to serve
None None pickles, to serve
None None vegetables, to serve
Preparation

Rinse beef and place in a large saucepan with onion, sugar, vinegar and cloves. Add enough water to cover. Bring to a boil over high heat. Reduce heat to low and simmer, covered, for 1 hour 15 mins, or until a skewer inserted is easily removed.
Serve sliced with roasted tomatoes, pickles and vegetables.
