Caramelized Asparagus With Strawberry Sauce - cooking recipe

Ingredients
    3 tbsp strawberry jam
    1 tbsp cider vinegar
    2 tbsp butter
    4-5 sprigs tarragon, one left for garnish, the rest chopped
    1 tsp picked green peppercorns, rinsed
    1 3/4 cups strawberries, hulled and finely diced
    1 lb white or green asparagus, woody ends trimmed and peeled
    4 tsp sugar
    2-3 tbsp oil
Preparation
    Put the jam and vinegar in a pan with 3-4 tablespoons water, bring to a boil then add the butter, chopped tarragon, peppercorns and strawberries. Cook for a minute then take off the heat.
    Cook the asparagus in boiling salted water, with 1 teaspoon sugar added, until just tender. Drain well.
    Heat the oil in a large frying pan and saute the asparagus in batches until browned all over. Sprinkle with the rest of the sugar and let it caramelize. Season.
    Serve the asparagus with the strawberry sauce spooned over the top. Garnish with tarragon. Accompany with rustic bread.
