Chicken And Vegetable Stew - cooking recipe

Ingredients
    1 tbsp olive oil
    3.5 oz chicken breast, cut into bite-size pieces
    1 None onion, peeled and finely chopped
    1/4 lb potatoes, peeled and cubed
    1/4 lb carrots, peeled and sliced
    1 cup vegetable stock
    1/3 lb Chinese cabbage, leaves separated and cut into pieces
    1 tsp dried thyme
    None None fresh parsley, to garnish
Preparation
    Heat oil in a large saucepan, add chicken and sear until lightly golden on all sides. Remove from pan and set aside. Add onion, potatoes, and carrots and saute for 4-5 mins. Return chicken to pan, add stock and cook for 5 mins. Add cabbage and thyme and cook for another 5 mins, until potatoes have softened. Garnish with parsley to serve.
