Ingredients

3 cups raw, plain muesli
1 cup whole wheat self-rising flour, plus 2 tbsp
1/2 cup dried cranberries, coarsely chopped
1/2 cup dried apricots, coarsely chopped
1/3 cup firmly packed brown sugar
6 tbsp margarine, melted
1 None large egg, lightly beaten, plus 1 large egg white
Preparation

Preheat oven to 375\u00b0F. Line 2 large baking trays with parchment paper.
Combine muesli, flour, cranberries, apricots and sugar in a large bowl. Make a well in the center. Add margarine and eggs. Mix until combined. Using damp hands, roll tablespoons of dough into balls. Place on prepared tray, about 1 1/2 inches apart. Flatten slightly with a fork. Bake for 12 mins, or until golden-brown. Let cool on trays.
