Chinese Pearl Meatballs - cooking recipe
Ingredients

8 oz short-grain rice
1 lb ground chicken
1 None large egg white
1/3 lb leek, chopped
4 None water chestnuts, finely chopped
1 tbsp ginger, freshly grated
1 tbsp soy sauce, plus extra, to serve
1 tbsp rice wine or dry sherry
Preparation

Place the rice in a bowl and cover with water. Soak for at least 2 hours or overnight. Drain and set aside.
For the meatball mixture, combine the chicken with the egg white, leek, water chestnuts, ginger, soy sauce and rice wine. Season to taste. Shape into 8 balls. Roll in the drained rice until well coated. Arrange in a steamer lined with parchment paper, cover and steam 15 mins over a pan or wok of boiling water. Serve with extra soy sauce.
