Dill And Smoked Salmon Loaf - cooking recipe

Ingredients
    7 oz smoked salmon
    14 oz small zucchini, coarsely grated
    3 None shallots, finely chopped
    5 None eggs, lightly beaten
    1 cup self-rising flour
    1 cup grated Cheddar cheese
    1/4 cup olive oil
    1 1/2 tbsp finely chopped fresh dill
Preparation
    Preheat the oven to 400\u00b0F. Lightly grease an 8 x 4 inch loaf pan. Line bottom and long sides with parchment paper.
    Cut salmon into large dice, reserving 5 strips. Combine diced salmon with remaining ingredients; season to taste. Spoon into prepared pan. Place reserved salmon across the top.
    Bake for 40 mins, until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
    Store in refrigerator.
