Sweet Potato Cake With Orange Frosting - cooking recipe

1 cup all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
2/3 cup brown sugar
3/4 cup raisins
1 cup walnuts, chopped
1 lb sweet potato, peeled, grated
3 None eggs, at room temperature
1 cup vegetable oil
3 tbsp orange zest
1 tbsp orange juice
3 1/2 tbsp unsalted butter, at room temperature
1/2 lb cream cheese, at room temperature
1 3/4 cups powdered sugar

Preheat oven to 350\u00b0F. Grease and line an 8 inch springform cake pan with parchment paper. Combine flour, baking powder, baking soda, cinnamon, sugar, raisins, walnuts and sweet potato. Whisk eggs, oil, 2 tbsp orange zest and orange juice together then mix into sweet potato mixture until combined. Transfer to prepared pan, level surface and bake for 45 mins.
Turn oven down to 325\u00b0F and continue to bake for 30 mins, or until golden and cooked when a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
Meanwhile, to make the orange frosting, cream butter until pale then beat in cream cheese, remaining orange zest and powdered sugar. Mix until smooth.
Cut cooled cake in 1/2 horizontally. Transfer cake base to a serving plate and spread 1/2 the frosting over base. Add top cake and spread remaining frosting over top. Serve.
