Gin And Lime Sorbet - cooking recipe

Ingredients
    3/4 cup sugar
    4 None limes, juiced, plus grated peel of 1 lime
    1 None egg white
    3/4 cup gin
    None None Fresh lemon balm or mint leaves, to garnish
Preparation
    Bring the sugar, lime peel and 1 1/4 cups water to a boil in a small saucepan. Remove from the heat and cool. Stir in the lime juice
    Beat the egg white in a medium bowl with an electric mixer until stiff peaks form. Fold in the lime mixture. Freeze for 1 hour. Stir well, then freeze for 30 mins. Stir again and freeze for a further 30 mins. Scoop into balls with an ice cream scoop and freeze again until ready to serve (at least 30 mins).
    Arrange the scoops in 4 dessert dishes. Pour 3 tbsp gin over each. Decorate with lemon balm or mint leaves.
