Seared Steak With Radish And Herb Salad - cooking recipe

Ingredients
    2 tbsp olive oil
    600 g sirloin steak
    1 tsp mustard
    1 tsp sugar
    2 tbsp vegetable stock
    1/2 None lemon, juiced
    4 None spring onions, finely sliced
    30 g radishes, finely sliced
    4 stems parsley, chopped + some for garnish
    1 punnet garden cress
    20 g alfalfa sprouts
Preparation
    Heat oven to 300\u00b0F. Heat 1 tbsp oil in a pan and sear the steak on both sides for 2 minutes over a high heat. Transfer to a roasting pan and place in the preheated oven for about 10 minutes.
    Meanwhile, mix the mustard, sugar, stock and lemon juice and whisk in 1 tbsp oil. Season with salt and pepper and set aside. Remove the steak from the oven and allow to cool for 10 minutes.
    Cut the steaks into thin slices and arrange on a serving platter. Mix the scallions, radishes, chopped parsley, watercress and sprouts and arrange in a pile in the center of the platter. Drizzle with the dressing and serve with a sprinkling of parsley and salt.
