Pepper And Potato Frittata - cooking recipe
Ingredients

1 tbsp olive oil
1 medium onion, thickly sliced
1/3 cup drained roasted red pepper, cut into strips
1 1/4 lbs new potatoes, steamed and thickly sliced
1/4 cup coarsely chopped fresh basil
1/4 cup coarsely chopped fresh flat-leaf parsley
10 None eggs, beaten lightly
1/2 cup coarsely grated Parmesan cheese
Preparation

Heat the oil in a large skillet on medium heat. Cook the onion, stirring, until softened. Stir in the pepper.
Layer the potato evenly over the pepper in the pan. Sprinkle with the herbs. Pour in the egg. Cook, uncovered, on low heat, for about 8 mins or until the frittata starts to set around the edge of the pan.
Meanwhile, preheat the broiler on high heat.
Sprinkle the frittata with Parmesan cheese. Pace the pan under the broiler. Cook until the frittata is set and browned lightly on top. Let stand for 5 mins before serving.
