Cheesecake Bars With Meringue - cooking recipe

Ingredients
    12 medium eggs
    575 g sugar
    50 g cornflour
    100 g plain flour
    1 tsp baking powder
    2 tsp vanilla extract
    2 kg cream cheese
    2 tsp custard powder
    2 tsp lemon juice
    1-2 tbsp icing sugar
Preparation
    Preheat oven to 400\u00b0F. Separate 4 eggs and beat the whites until stiff with 4 tbsp cold water while slowly adding 1/2 cup sugar. Stir in the eggs yolks one at a time then sift and fold in the cornstarch, flour and baking powder. Transfer to a parchment-lined jelly roll pan and bake, on the middle shelf, for 8-10 minutes.
    For the cheesecake layer, separate 6 eggs and mix the yolks only with 2 whole eggs, 2 tsp vanilla extract and 3/4 cup, plus 2 tbsp sugar. Beat until creamy then whip in the cream cheese and pudding powder. Spread cream cheese mixture over cake base and return to the bottom shelf of the oven and bake for 45 minutes.
    12 minutes before the end of cooking, beat the 6 egg whites and lemon juice until very stiff while slowly adding remaining sugar. Remove the cake from the oven, top with the meringue mixture and bake for a further 10 minutes. Allow to cool before dusting with powdered sugar and serving.
