Sage And Lemon Chicken - cooking recipe

Ingredients
    .75 oz sage leaves
    3 1/2 lbs chicken
    2 None lemons, 1 quartered, 1 sliced
    2 None small onions, halved
    4 tbsp olive oil
    1 lb sweet potatoes, peeled and cut into wedges
    1 small head cauliflower, trimmed and broken into small florets
Preparation
    Preheat the oven to 400\u00b0F. Carefully slide the sage leaves under the skin of the chicken. Season the cavity and the skin of the chicken.
    Place the lemon quarters and onion halves inside the cavity. Tie the ends of the legs together with kitchen string. Place the chicken on a wire rack in a roasting pan and rub the chicken with 1 tbsp of the olive oil. Roast for 1 hour 15 mins.
    Meanwhile, combine the sweet potatoes, cauliflower, lemon slices and remaining olive oil in a bowl. Season to taste.
    25 minutes before the end of cooking time, remove the roasting pan from the oven. Remove the wire rack and chicken and set aside. Transfer the vegetable mix to the roasting pan, then replace the wire rack with the chicken on top. Return to the oven to roast for the remaining cooking time.
