Parmesan And Chive Shortbread - cooking recipe

1/4 cup flour
2 tbsp rice flour
1 cup (2 sticks) cold butter, cubed
1 cup grated Parmesan cheese
1/4 cup toasted pinenuts
2 tbsp fresh chopped chives
1 tsp garlic powder
Preparation

Preheat the oven to 350\u00b0F. Lightly grease 3 baking sheets.
Sift the flours into a large bowl. Add the butter and rub in using your fingertips, until the mixture resembles breadcrumbs. Stir in the remaining ingredients. Season to taste.
Press the mixture together to form a ball (adding 1 or 2 tsp of water, if necessary). Roll about tablespoons of the mixture into balls. Place on prepared pans and flatten each one slightly.
Bake for 20-25 mins, until lightly browned. Cool completely on a wire rack. Store in an airtight container.
