Ingredients

1/2 cup butter, melted
1 cup firmly packed brown sugar
1 None large egg
1 tsp vanilla extract
1/2 cup all-purpose flour
1/4 cup self-rising flour
2 tbsp cocoa powder
1/2 cup shredded coconut, plus 1 tbsp
None None Chocolate Icing
1 cup powdered sugar
2 tsp butter
2 tbsp cocoa powder
1 tbsp hot water
Preparation

Preheat oven to 350\u00b0F. Grease and line a 7x12 inch brownie pan with parchment paper, extending paper 3/4 inch over long sides.
Combine butter, sugar, egg and vanilla. Sift flour and cocoa powder together then stir into mixture. Fold in 1/2 cup coconut. Transfer to prepared pan and bake for 25 mins, or until firm.
Meanwhile, to make the chocolate icing, sift powdered sugar and cocoa powder into a small bowl. Add butter and 1 tbsp hot water. Stir until smooth.
Spread icing over hot brownies and sprinkle with remaining shredded coconut. Let cool then cut into squares or triangles. Serve.
