Ramen Noodles With Chicken And Vegetables - cooking recipe

Ingredients
    1 None chicken breast, on bone
    2 None carrots, 1 roughly chopped and 1 sliced
    2 cm ginger, chopped
    2 None chilli peppers
    1 tbsp oil
    100 g shiitake mushrooms, sliced
    100 g bean sprouts
    1 None red pepper, sliced
    200 g Japanese wheat noodles
    250 g pak-choi, cut into strips
    314 ml can bamboo shoots, drained
Preparation
    Bring 4 cups water to a boil in a large saucepan on high heat. Add chicken, chopped carrot, ginger and chili peppers. Reduce heat to low and simmer for about 30 mins.
    Remove the chicken from the pan. Remove the skin and chop the meat into small pieces. Pour the liquid through a sieve into a bowl.
    Heat oil in the same pan on medium-high heat. Add carrot slices, mushrooms, bean sprouts and pepper and saute 3 mins. Add cooking liquid and bring to a boil. Add noodles and cook for 4-5 mins, adding bok choy, bamboo shoots and diced chicken after 2 mins.
