Mushrooms In Oil - cooking recipe

Ingredients
    2 1/2 cups white wine vinegar
    1/2 cup white wine
    4 None bay leaves
    2 1/2 lbs button mushrooms, stems trimmed at an angle
    2 tbsp salt
    4 cloves garlic, halved
    None None Light olive oil, to cover
Preparation
    Bring vinegar, wine, bay leaves and 1 cup water to a boil in a large saucepan. Add mushrooms and salt. Simmer on low heat for 10 mins. Drain in a colander, reserving bay leaves. Using a spoon to prevent bruising, spread mushrooms, stem-side down, on a dry tea towel to cool.
    Fill sterilized jars with mushrooms, bay leaves and garlic. Cover with oil, pressing down on mushrooms with back of a spoon to release any air. Seal and store in a cool, dark place.
