8 tbsp (1 stick) butter, softened
1/2 cup sugar
1 None egg
1 tsp almond extract
1 1/4 cups flour, sifted
3 oz grated marzipan
1/3 cup dried cranberries, chopped
1 cup chopped pistachios
Preparation

Preheat the oven to 325\u00b0F. Line 2 baking pans with parchment paper.
Beat butter, sugar, egg and almond extract in a large bowl with an electric mixer until pale and creamy. Fold in flour, marzipan and cranberries.
Roll heaping teaspoons into balls. Coat in pistachios. Arrange on prepared pans. Refrigerate 30 mins.
Bake 15-20 mins, until golden. Cool in pans 5 mins. Remove from pans; cool completely on wire rack.
