Apple, Cranberry And Coconut Squares - cooking recipe

Ingredients
    1 1/2 cups flour
    1 cup self-rising flour
    1/2 cup plus 2 tbsp flaked coconut
    2/3 cup powdered sugar
    12 tbsp (1 1/2 sticks) cold butter, chopped
    1 None egg
    1 1/2 cups canned apple pie filling
    1/3 cup dried cranberries
    1 tbsp brown sugar
    1/2 tsp ground cinnamon
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease and line a 12 x 8-inch baking pan with parchment paper.
    Place flours, 1/2 cup coconut, powdered sugar and butter in a food processor. Pulse until mixture resembles breadcrumbs. Add egg, processing until dough just comes together. Turn out onto a lightly floured surface. Knead gently until smooth.
    Press two thirds of dough into bottom of prepared pan to an even thickness. Refrigerate until required.
    Shape remaining dough into a thick log and wrap in plastic wrap. Freeze for 30 mins, until firm.
    Spread apple pie filling evenly over dough in pan. Sprinkle with cranberries, brown sugar and cinnamon. Grate frozen dough over the top. Sprinkle with remaining 2 tbsp coconut.
    Bake 35-40 mins, until firm to the touch. Cool completely in pan on wire rack. Cut into squares to serve.
