Halloumi And Broccoli Salad - cooking recipe

Ingredients
    2 1/4 lb Chinese broccoli
    2 tbsp butter
    1 tbsp olive oil
    1 clove garlic, minced
    1/2 cup fresh breadcrumbs
    1 1/2 lb halloumi, sliced into 1/3 inch-thick pieces
    1 None lemon, juiced
    2 tsp extra-virgin olive oil
Preparation
    Blanch broccoli in boiling salted water for 3 mins. Shock in ice water until cool then drain.
    Combine butter, olive oil and garlic in a frying pan over medium heat. Add breadcrumbs and cook for 15 mins, stirring regularly, until golden brown. Drain on paper towels.
    Heat a large grill pan over medium-high heat. Cook halloumi for 3 mins per side, or until golden brown.
    Arrange broccoli and halloumi on a serving platter. Drizzle with lemon juice and extra-virgin olive oil. Season. Sprinkle with garlic breadcrumbs.
