Winter Salad With Orange Dressing - cooking recipe

Ingredients
    2 None oranges, grated zest, peeled, pith and segment membranes removed, any juice reserved
    1 None lemon, juiced
    5 tbsp maple syrup
    6 tbsp olive oil
    1 head radicchio or other firm leaf lettuce, roughly chopped
    2 heads Belgian endive, roughly chopped
    2 None small red onions, peeled and cut into rings
    None None watercress, for garnish
Preparation
    In a bowl, mix the orange juice and zest, lemon juice and maple syrup. Season with salt and black pepper and gradually whisk in the oil.
    Toss the radicchio, endive, onion and orange segments on serving plates. Sprinkle with cress and drizzle with the dressing.
