Open Faced Smoked Mackerel Sandwiches - cooking recipe

Ingredients
    1 tbsp butter, softened
    2 thick slices whole wheat bread
    1 None large plum tomato, sliced
    2 handfuls mixed greens
    2 (2oz) smoked mackerel fillets, skin removed, flesh flaked into large pieces
    None None DRESSING
    3 tbsp olive oil
    1 tbsp lemon juice
    1 tbsp prepared horseradish
Preparation
    Lightly butter bread then place on 2 serving plates. Arrange tomato slices, mixed greens and fish on top.
    Whisk together all dressing ingredients. Season. Drizzle over sandwiches. Serve.
