Lamb Chops With Warm Potato Salad - cooking recipe

Ingredients
    1 kg new potatoes, washed and halved
    6-7 tbsp olive oil
    200 g shallots, peeled and halved
    2 cloves garlic, minced
    5 tbsp light balsamic vinegar
    12 None lamb chops
    75 g rocket
    150 g cherry tomatoes, sliced
Preparation
    Preheat oven to 400\u00b0F. Mix potatoes with 1-2 tbsp oil and place on a baking sheet. Season with salt and pepper and bake for about 15 mins. Add the shallots and return to the oven for 15-20 more minutes. Remove and allow to cool slightly.
    Meanwhile, to make the dressing, mix the garlic, vinegar and 5 tbsp oil. Season with salt, pepper and a pinch of sugar and set aside.
    Heat a frying pan and brown the lamb chops on each side for about 2 minutes, seasoning with salt and pepper. In a large bowl, toss the warm potatoes and shallots with the arugula, tomatoes and dressing. Serve with the lamb chops.
