Chocolate Cupcakes With Chocolate Curls - cooking recipe

9 tbsp butter, softened
1 tsp vanilla extract
3/4 cup sugar
3 None large eggs
1 1/4 cups self-raising flour
1/4 cup milk
1/3 cup cream
4 oz dark chocolate, chopped coarsely
3 oz dark chocolate, melted
3 oz white chocolate, melted
Preparation

Preheat oven to 350\u00b0F. Line 2 deep 12-hole muffin pans with paper cases.
Combine butter, vanilla, sugar, eggs, flour and milk in small bowl of electric mixer and beat on low speed until ingredients are just combined. Increase speed to medium, beat for 3 mins or until mixture is smooth. Divide mixture into cases.
Bake for 20 mins. Turn cupcakes out onto wire rack to cool.
Meanwhile, make the dark chocolate ganache by stirring the cream and 4 oz of dark chocolate in small saucepan over low heat until smooth. Cool to spreading consistency.
Meanwhile spread the melted dark and white chocolate separately onto a cold surface. When set, drag a melon baller over the chocolate to make curls. Spread top of cupcakes with ganache. Arrange chocolate curls on top of cakes.
