Raisin Bran Cookies - cooking recipe

9 tbsp unsalted butter, at room temperature
1/2 cup brown sugar
1/2 cup sugar
1 tsp vanilla extract
1 None large egg, lightly whisked
1/3 cup flour
2/3 cup bran flakes, crushed
7 oz raisins
Preparation

Preheat oven to 325\u00b0F. Line 2 large baking sheets with parchment paper. For the dough, beat butter, brown sugar, sugar and vanilla in a large bowl with an electric mixer until pale and creamy. Add egg and beat until just combined. Sift flour directly over butter mixture into bowl. Add crushed bran flakes and raisins. Stir until well combined.
Roll heaped tbsps of dough into balls. Place balls, 1 inch apart, on prepared baking sheets and flatten slightly. Bake 35 mins, or until golden. Cool on baking sheets 5 mins then transfer to a wire rack to cool completely.
