Bruschetta Sausage Sandwich - cooking recipe

Ingredients
    4 None Italian sausages, halved lengthwise
    4 None flatbreads or ciabatta rolls, split
    4 None tomatoes, finely chopped
    1 small red onion, chopped
    1/2 cup basil leaves, shredded, plus additional, to serve
    2 tbsp extra virgin olive oil
    1 tbsp balsamic vinegar
    1 clove garlic, crushed
    None None Mayonnaise, to serve
Preparation
    Preheat an oiled grill pan on medium heat. Grill sausages, cut side down, 8-10 mins, turning once, until cooked through.
    Grill bread 1 min each side, or until light grill marks appear.
    Combine tomatoes, onion, basil, oil, balsamic vinegar and garlic in a bowl. Season to taste.
    Spoon tomato mixture evenly over half the bread. Top with sausages and a dollop of mayonnaise. Sandwich together with remaining bread. Top with additional basil leaves to serve.
