Strawberry And Peach Bread Pudding - cooking recipe

Ingredients
    4 oz dried strawberries
    4 oz dried peaches, cut into quarters
    1/3 cup brandy
    2/3 lb brioche bread, cut into chunks
    4 None large eggs, lightly beaten
    1/4 cup sugar
    2 cup low-fat milk
    1 cup light cream
    1 None vanilla bean, split lengthwise, seeds scraped
    None None powdered sugar, for dusting
Preparation
    Preheat oven to 375\u00b0F. Grease an 8-cup baking dish with butter. Soak dried fruit in brandy for 10 mins. Place half of brioche in base of prepared dish. Top with 2/3 of fruit. Top with remaining brioche and fruit.
    Whisk together egg and sugar. Place milk and cream in a pan on low. Stir in vanilla. Heat until almost simmering. Whisk into egg mixture. Strain over brioche and let stand 10-15 mins. Place baking dish in a larger baking pan. Fill baking pan halfway with hot water and bake 45 mins, until a knife inserted comes out clean. Dust with powdered sugar to serve.
