Greek Salad - cooking recipe
Ingredients

9 oz cherry tomatoes, quartered
2 small cucumbers, quartered lengthwise and chopped
1 large red pepper, seeded and coarsely chopped
1 large green pepper, seeded and coarsely chopped
1 small red onion, thinly sliced
1/2 cup coarsely chopped flat-leaf parsley
2 tbsp chopped mint
1/3 cup pitted Kalamata olives, halved
2 tbsp vegetable or olive oil
2 tbsp white balsamic vinegar
1/3 cup marinated feta cheese, crumbled
Preparation

Toss tomatoes, cucumbers, peppers, onion, parsley, mint and olives in a large bowl.
Whisk oil and balsamic vinegar in a small bowl. Drizzle dressing over salad. Season with salt and pepper; toss gently to combine. Top with feta; serve at once.
