Greek Salad - cooking recipe
Ingredients

1 tbsp white wine vinegar
2 tbsp cold vegetable stock
1/4 tsp sugar
1 small onion, peeled and thinly sliced into rings
200 g tomatoes, roughly chopped
50 g romaine lettuce, chopped
50 g reduced fat feta cheese, cubed
30 g avocado slices
5 None pitted black olives
3 None basil leaves, chopped plus 1 extra to garnish
Preparation

Mix the vinegar and stock in a small bowl, whisk in the sugar and season with salt and freshly ground black pepper.
Toss the onion, tomatoes, lettuce, cheese, avocado, olives and chopped basil in a serving dish. Add the dressing and toss well to mix. Sprinkle with more ground black pepper and serve garnished with the basil leaf.
