Lamb And Rice Salad - cooking recipe

Ingredients
    1 tbsp olive oil
    1 tsp ground cumin
    1 lb lamb leg steaks, chopped
    10.5 oz basmati rice, cooked, cooled
    4 oz mixed dried fruit
    1 cup fresh cilantro leaves
    1/2 cup sliced almonds, toasted
    2 None green onions, sliced
    None None FOR THE DRESSING
    2 tbsp olive oil
    2 tbsp red wine vinegar
    1 None orange, zested and juiced
Preparation
    In a bowl, combine oil and cumin. Add lamb and toss to coat. Season. Heat a large frying pan over high heat. Cook lamb for 3-4 mins, turning, until browned. Set aside to rest.
    Meanwhile, in a large bowl, combine rice, dried fruit, cilantro, almonds and green onions.
    Whisk together olive oil, vinegar, orange zest and orange juice. Drizzle 1/2 over rice mixture and toss to combine. Top with lamb and serve with remaining dressing.
