Chicken Yakitori Skewers - cooking recipe

Ingredients
    1/2 cup dark soy sauce
    2 tbsp mirin (rice wine)
    1 tbsp brown sugar
    1 lb boneless skinless chicken thighs, trimmed and cubed
    1 None zucchini, sliced into 1/4 inch- thick rounds
    1 None red pepper, seeded and cubed
    4 None shallots, peeled and halved
    8 None metal skewers or bamboo skewers, soaked
    None None Steamed rice, to serve
Preparation
    Place soy, mirin and sugar in a small saucepan on medium heat. Stir for 1-2 mins, until sugar dissolves and mixture is boiling. Reduce heat to low and simmer 2-3 mins. Reserve 1/2 for brushing.
    Preheat broiler. Thread chicken and vegetables alternately onto skewers. Brush with remaining sauce. Arrange on an oiled foil-lined tray.
    Broil skewers 8-10 mins, turning and basting with remaining sauce halfway through cooking.
    Serve chicken skewers with steamed rice and reserved sauce.
