Creamy Mushroom Soup - cooking recipe

1/8 stick butter
1 None small onion, finely diced
3 1/4 cups white mushrooms, thinly sliced
1 cup shiitake mushrooms, thinly sliced
2 None celery sticks, thinly sliced
1/4 cup dry white wine
10 oz vegetable stock
3 tbsp cornstarch
3 1/2 tbsp whipping cream
None None Pink peppercorns and parsely, to garnish
Preparation

Heat the butter in a saucepan, add the onion, mushrooms and celery and saute over a medium-high heat for 3-4 mins, stirring. Pour in the white wine and stock and bring to a boil. Cover and simmer for 6-8 mins.
Whisk the cornstarch into the cream the pour it into the pan. Bring to a boil and simmer, stirring, until the soup thickens. Season. Divide the soup between 2 soup bowls and garnish with pink peppercorns and parsley. Serve.
