Asian Beef Salad - cooking recipe

Ingredients
    1/4 cup sweet chili sauce
    2 None limes, zested and juiced
    1 tbsp rice wine vinegar
    1 tbsp fish sauce
    2 tsp palm sugar

    1 lb beef tenderloin medallions, trimmed
    2 cups cherry tomatoes, halved
    2 None Persian cucumbers, sliced
    8 None spring onions, thinly sliced
    1/2 bunch fresh mint, leaves picked
    1/2 bunch fresh cilantro, leaves picked
    1/2 bunch coriander, leaves picked
Preparation
    Preheat grill. Lightly coat steaks with oil and season. Grill for 4-6 mins per side then set aside. Cover loosely with foil and let rest for 5 mins. Slice thinly.
    Whisk together sweet chili sauce, lime zest, lime juice, rice wine vinegar, fish sauce and palm sugar in a large serving bowl. Add cherry tomatoes, cucumbers, spring onions and herbs. Toss to combine. Arrange beef over top. Serve.
