Mussels With Garlic Crumbs - cooking recipe

Ingredients
    3/4 cup stale breadcrumbs
    2 cloves garlic, minced
    1 tsp lemon zest
    2 tbsp fresh flat-leaf parsley leaves, finely chopped
    2 1/4 lb small black mussels, scrubbed, beads removed
    1/4 cup extra virgin olive oil
Preparation
    Preheat broiler. Combine breadcrumbs, garlic, lemon zest and parsley. Set aside.
    Bring 1 2/3 cups water to a boil in a large saucepan. Add mussels. Boil, covered, for about 7 mins, or until mussels open, discarding any that do not open.
    Open mussel shells and discard tops. Loosen mussels from shells then place back in shells. Arrange in a single layer on a large baking tray. Sprinkle with breadcrumb mixture and drizzle with oil. Broil for 3 mins, or until browned. Serve hot.
