Penne Bolognese - cooking recipe

Ingredients
    1/2 bunch spring onions, trimmed and chopped
    1 None carrot, peeled and diced
    2 stalks celery, trimmed and diced
    1 None red chilli, deseeded and chopped
    2 None raw sausages
    1 tbsp oregano, finely chopped
    1 tsp fennel seeds
    500 g penne
    2 tbsp olive oil
    1 tin (425ml) tomatoes
    2 sprigs basil, roughly chopped
Preparation
    Squeeze the meat out of the sausage casings. Combine the sausage meat with the oregano and fennel seeds. Cook the pasta in boiling salted water according to directions on the package.
    Heat the olive oil in a skillet and saute the vegetables for 5 mins. Add the sausage meat and break up with a wooden spoon. Cook the sausage until it starts to brown. Add the tomatoes, season, and simmer the sauce for 5 mins. Drain the pasta.
    Stir the pasta and basil into the sauce, until pasta is well coated. Serve the pasta garnished with basil.
