Roasted Red Pepper Tarts - cooking recipe

Ingredients
    1 sheet frozen pie dough, thawed
    2 tbsp olive oil
    1 clove garlic, chopped
    1 (9.5 oz) jar roasted red peppers, drained and chopped
    3.5 oz feta cheese, crumbled
    1 tsp fresh oregano leaves, chopped + extra leaves, to garnish
Preparation
    Preheat oven to 400\u00b0F. Lightly grease a 12-cup mini muffin pan. Cut 12 - 2 1/2 inch discs from pie dough and use to line prepared pan. Prick bases with a fork then bake for 10-15 mins, until golden. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
    Meanwhile, heat oil in a small saucepan and saute garlic for 1 min, or until tender. Add peppers and cook, stirring, for 1-2 mins. Remove from heat. Add feta and oregano. Season to taste. Transfer to a food processor or blender and process until smooth. Pass mixture through a fine mesh sieve then distribute between tart shells. Garnish with oregano leaves.
