Corned Beef And Potato Bake - cooking recipe

5 None medium red potatoes, peeled
4 None eggs
1 1/2 cups half and half
1 lb corned beef, chopped
1/2 cup french fried onions
2/3 cup gouda or cheddar, grated
None None fresh chives and chopped cherry tomatoes, for garnish
Preparation

Preheat the oven to 325\u00b0F. Grease an 8 x 8 inch baking dish. Cook the potatoes in boiling salted water for 20 mins. Drain, rinse with cold water and slice.
In a bowl, whisk the eggs and cream together. Season with salt and black pepper. Layer the corned beef, potatoes and onions in the dish and pour over the egg mixture. Sprinkle with the cheese. Bake for 25 mins, until golden brown. Garnish with chives and tomatoes.
