Gingerbread Men - cooking recipe
Ingredients

1/2 cup butter, chopped
1/2 cup granulated sugar
1 None large egg yolk
2 1/4 cups all-purpose flour
3 tsp ground ginger
1 tsp baking soda
1/2 cup golden syrup or honey
None None candied cherries and assorted candies, to decorate
None None FOR THE ICING
1 None large egg white
1 1/4 cups powdered sugar, sifted
2-3 drops lemon juice
None None food coloring, of choice
Preparation

Preheat oven to 350\u00b0F. Lightly grease 2 baking trays or line with parchment paper.
Beat butter and sugar for 2-3 mins, until creamy. Add egg yolk and mix well. Sift flour, ginger and baking soda together. Warm golden syrup in a saucepan over low heat then lightly mix into butter mixture until combined. Add flour mixture and mix until combined.
Turn dough out onto a lightly floured work surface and knead until smooth. Roll out to 1/4 inch thick then cut out gingerbread men with a floured cookie cutter. Arrange on prepared trays and bake for 10-15 mins. Let cool on trays.
Meanwhile, to make the icing, whip egg white until frothy. Add powdered sugar, a spoonful at a time, beating well after each addition. When icing reaches a piping consistency, mix in lemon juice. Add food coloring. Use to decorate cooled gingerbread men. Decorate with candied cherries and assorted candies.
