Pan Fried Calamari With Rice - cooking recipe
Ingredients

1 1/2 cups jasmine rice
1 cup tomato sauce
3 1/2 cups water
1 1/4 lbs baby squid hoods, cleaned
2 cloves garlic, crushed
1/4 cup flat leaf parsley, finely chopped
1/4 cup shaved parmesan
Preparation

Rinse rice under cold water until water runs clear and drain.
In a medium saucepan, combine rice, tomato sauce and water and bring to a boil, stirring occasionally. Reduce heat and simmer, covered tightly, for about 15 mins, or until tender. Remove from heat, let stand, covered, for 5 mins.
Meanwhile, slice squid thickly into rings. Combine squid and garlic in a medium bowl.
In a heated, oiled large frying pan, cook squid, in batches, for about 2-3 mins, or until tender. Combine squid with rice and parsley. Serve sprinkled with parmesan cheese.
