Pork And Peach Salad With Orange Dressing - cooking recipe

14 oz roast pork, sliced
1 head radicchio, leaves separated
3 oz baby arugula leaves
3 None peaches, peeled, pitted and sliced
1/4 cup pine nuts, toasted
1/4 cup mint leaves
None None FOR THE ORANGE DRESSING
1/4 cup extra virgin olive oil
2 tbsp orange juice
2 tbsp Dijon mustard
1 clove garlic, crushed
Preparation

Combine pork, radicchio, arugula, peaches, pine nuts and mint in a large bowl.
For the orange dressing, whisk all ingredients in a small bowl. Season to taste. Drizzle over salad; toss gently to combine.
