Asparagus Tart With Raisins And Mozzarella - cooking recipe

3 1/3 lb green and white asparagus, trimmed
2 tbsp butter
9.5 oz puff pastry, thawed if frozen
1/4 lb mozzarella cheese, cut into small pieces
2 oz Parmesan cheese, grated
5 sprigs fresh flat-leaf parsley, leaves removed and chopped
4 sprigs fresh mint, leaves removed and chopped
2 oz raisins
Preparation

Preheat oven to 400\u00b0F. Grease a 10 inch tart pan. Cook asparagus in boiling salted water for about 7 mins. Drain and rinse under cold water. Melt butter, add asparagus and saute for 5 mins. Season.
On a lightly floured surface, roll out pastry to a circle large enough to fill the base and sides of the tart pan then line the tart pan. Mix asparagus, mozzarella, Parmesan, herbs and raisins and transfer to tart pan. Bake for 30-40 mins until golden. Serve hot or warm.
