Hot And Sour Shrimp Vermicelli Salad - cooking recipe

Ingredients
    9 oz dried rice vermicelli noodles
    1 None lemon, halved lengthwise, 1/2 thinly sliced
    1 None lime, halved lengthwise, 1/2 thinly sliced
    1 None cooked shrimp, peeled, deveined, tails intact
    1 None red pepper, thinly sliced
    1 None yellow pepper, thinly sliced
    1 None medium red onion, thinly sliced
    1/4 cup olive oil
    1/4 cup rice vinegar
    1 tbsp sambal oelek (or other chili sauce)
    1 tbsp fish sauce
    2 tbsp grated palm sugar
    2 cups fresh cilantro leaves
Preparation
    Place noodles in a large heatproof bowl. Cover with boiling water and let stand until just tender. Rinse under cold water then drain.
    Place lemon and lime slices in a large bowl and squeeze in juice of unsliced halves. Add shrimp, noodles and remaining ingredients. Toss gently to combine.
