Gooseberry Streusel Tart - cooking recipe

Ingredients
    5 1/3 cups all-purpose flour
    2 1/4 cups butter or margarine, cut into pieces
    2 1/4 cups brown sugar
    1-2 tsp vanilla extract
    2 1/4 lb red and green gooseberries, washed
    1 - 11 oz jar lemon curd
    1/2 cup heavy cream
Preparation
    Preheat oven to 350\u00b0F. To make the streusel, mix flour, butter, sugar and vanilla extract together until the mixture resembles breadcrumbs. Grease a 13x15 inch baking tray and firmly press 2/3 of the mixture into base and up sides. Mix gooseberries and 2 tbsp lemon curd then spread over base. Sprinkle with remaining streusel and bake for 50 mins. Let cool then cut into pieces. For the sauce, mix cream with remaining lemon curd until smooth and serve with tart.
