Macaroni With Meatballs - cooking recipe

Ingredients
    8.75 oz ground beef
    4 1/2 cups breadcrumbs
    1 None small potato, peeled, grated
    1 None small carrot, grated
    1 None small zucchini, grated
    2 None spring onions, finely chopped
    1 None egg, lightly beaten
    1 tbsp barbecue sauce
    1 tbsp olive oil
    14 oz cooked macaroni
    2 1/2 cups pasta sauce
    1 (13.5 oz) can diced tomatoes
    1/3 cup fresh parsley, chopped + extra, to serve
    1/3 cup mozzarella cheese, grated
    None None salad, to serve
    None None crusty bread, to serve
Preparation
    Preheat oven to 350\u00b0F.
    Combine ground beef, breadcrumbs, potato, carrot, zucchini, onions, egg and barbecue sauce. Season. Roll into small meatballs.
    Heat oil in a large frying pan over high heat. Cook meatballs, tossing, for 4-5 mins, until browned. Drain on paper towels.
    Place macaroni in a large baking dish. Combine meatballs, pasta sauce, tomatoes and parsley. Season then pour over macaroni. Sprinkle with mozzarella. Bake for 15-20 mins, until pasta is hot and cheese melts.
    Sprinkle with extra parsley. Serve with salad and crusty bread.
