Coffee Apple Squares With Caramel Icing - cooking recipe

1/2 cup golden raisins
1 tbsp instant coffee granules
6 tbsp (3/4 stick) butter
1 tsp vanilla extract
1 cup firmly packed brown sugar
1 None egg
1 1/2 cups self-rising flour
1/2 tsp ground cinnamon
1/2 tsp baking soda
1 None apple, grated
None None FOR THE CARAMEL ICING
2 tbsp brown sugar
2 tbsp butter
1 tbsp milk
1 cup powdered sugar
1/3 cup chopped walnuts

Preheat the oven to 350\u00b0F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.
Combine raisins, coffee and 1/2 cup water in a small saucepan. Bring to a boil. Remove from heat. Cool to room temperature.
Beat butter, vanilla and brown sugar in a large bowl with an electric mixer until light and fluffy. Beat in egg.
Fold in half each of the combined sifted flour, cinnamon and baking soda, and raisin mixture. Fold in remaining flour and raisin mixtures. Stir in apple. Spread mixture into prepared pan.
Bake for about 25 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
For the caramel icing, combine brown sugar, butter and milk in small saucepan. Stir constantly on low heat without boiling until smooth. Gradually stir in sifted powdered sugar.
Spread icing over top of dessert. Sprinkle with walnuts. Let stand until icing is set before cutting into squares.
