Asparagus, Bacon And Pinenut Salad - cooking recipe
Ingredients

2 lbs white asparagus, tough ends removed and diagonally sliced
1 None orange, juiced and zested
1 None lemon, juiced
4 slices thick sliced bacon, cut into 1/4 inch slices
2 tbsp pine nuts
3 None plum tomatoes, sliced
4 stems basil, leaves torn
Preparation

In a bowl, mix together the asparagus, orange juice, orange zest and lemon juice. Leave to marinate for about 15 minutes.
Cook the bacon over a medium heat until crispy on both sides. Remove the asparagus from the marinade and add to the bacon, stirring to coat.
In a separate skillet, toast the pine nuts until golden brown. Mix the pine nuts with the bacon, asparagus, tomatoes and basil. Season with salt and pepper and serve.
