Beer-Glazed Chicken With Vegetables - cooking recipe

1 None whole chicken (about 3lbs)
1/3 cup honey
1/2 cup pale ale
1 3/4 lbs potatoes, sliced
1/2 lb carrots, sliced
1/2 lb zucchini, sliced
2 tbsp olive oil
None None Parsley, to garnish
Preparation

Preheat the oven to 325\u00b0F. Season the chicken then tie the legs and wings using kitchen string. Place in a roasting pan and roast for 30-35 mins.
Heat the honey and stir in the ale. Brush over the chicken after 2 mins in the oven, and again at intervals during cooking.
Mix the vegetables together in a bowl and drizzle with oil. Arrange the vegetables around the chicken in the roasting pan. Then continue to cook for 30-40 mins, until tender. Serve the chicken and vegetables on a large plate and garnish with parsley.
